3 Bean Chilli

Serves 4 generously (with leftovers)

  •  1 onion chopped
  • 2 sticks celery finely chopped
  • 1 yellow or red pepper finely chopped
  • 1 carrot finely chopped
  • 3 garlic cloves crushed
  • 1 tbsp olive oil
  • 3 tbsp mild chilli powder
  • 400g tinned tomatoes
  • 400g can mixed beans
  • 400g chickpeas
  • 1 tbsp tomato puree
  1. Prepare all the vegetables
  2. Heat the oil in a frying pan and add the onions, peppers, carrots, celery, and garlic.  Coat in oil and fry on a medium heat with a pinch of salt for around 10 mins.
  3. Add the chilli powder and stir to coat the veg.  Leave to cook the spices for 2 mins.
  4. Add the tinned tomatoes, beans, chickpeas and tomato puree.
  5. Mix together and leave to simmer for 20-30 mins

 

TOP TIPS

Feel free to add any other spices i.e. smoked paprika, cumin, coriander, cinnamon according to taste

Serve in wholemeal wraps, with rice or a side salad. Freezes very well, so you can cook in batches and freeze in portions.
