Baked Apples

Serves 6

  • 6 apples
  • 75g sultanas
  • 2 tablespoons light muscovado sugar
  • 1 teaspoon cinnamon
  • 25g butter
  • 2 teaspoons demerara sugar
  • lemon rind (optional)

 

  1. Heat oven to 200 degrees/180 fan
  2. Remove cores from the apples
  3. In a bowl mix the sultanas, cinnamon, and muscovado sugar
  4. Place apples in a baking dish
  5. With your fingers push the sultana mixture into the apples
  6. Add a small knob of butter to the top of each apple, sprinkle with the demerara sugar
  7. Top with a few strands of lemon rind, if desired
  8. Cook for 20 minutes
  9. Serve hot or cold, on its own, or with yoghurt
