Broccoli cupcakes

Makes around 10 cupcakes

Ingredients for the cupcake

  • 1 1/2 cup oats
  • 600 G broccoli florets (frozen)
  • 2 cups cheese
  • 2 eggs
  • Salt and pepper

Directions

  1. Pre heat oven 160ºc degrees
  2. Cook broccoli florets according to the packet, drain and let it cool then chop it up
  3. Mix the eggs, cheddar, oats, salt and pepper together in a bowl
  4. Add the chopped broccoli and stir
  5. Grease a cupcake pan with cooking spray or a little oil on kitchen paper or a pastry brush
  6. Spoon the mixture into the pan and cook for approximately 20-25 minutes

Serve with 2 or 3 salad items of your choice. Some of our favourites inclue lettuce, radishes, tomatoes, beetroot, cucumber, or sweetcorn.
