Chocolate Cookies

Makes 12

  • 115g unsalted butter, at room temperature
  • 175g soft light brown sugar
  • 1 egg
  • 1/4 tsp vanilla extract
  • 200g plain flour
  • 1/4 tsp salt
  • 11/2 tsp bicarbonate of soda
  • 115g dark chocolate roughly chopped

 

  1. Preheat oven to 170°C.
  2. Line 2 baking trays, lined with greaseproof paper.
  3. Put the butter and sugar in a bowl and mix until light and fluffy. This will be much easier and quicker if you have an electric whisk but you can just use a handwhisk.
  4. Add the egg, mix well, scrape any unmixed ingredients from the sides of the bowl and mix again.
  5. Turn the mixer down to slow speed and beat in the vanilla extract.
  6. Add the flour, salt and bicarbonate of soda and mix well until a smooth dough is formed.
  7. Stir in the chopped chocolate. Make sure it’s evenly spread through the cookie dough.
  8. Arrange 6 equal amount of cookie dough on each prepared baking tray. Make sure that the cookies are spaced apart to allow for spreading while baking.
  9. Bake in preheated oven for about 10 min or until golden brown around the edges and quite flat.
  10. Leave the cookies to cool slightly on the trays before out onto a wire cooling rack to cool completely.
  11. The cookies should be soft and chewy.
