Ciambotta

Serves 4

As this is essentially a Southern Italian vegetable stew you can use a variety of vegetables depending what you have available.  This makes a great, tasty and cheap dinner.

  • 1 onion, sliced
  • 4 medium potatoes, peeled and cubed
  • 2 large courgettes, cubed
  • 1tsp dried chillies
  • 1 tbsp olive oil
  1. Heat the oil in a frying pan

 

  1. Fry the chilli for a couple of minutes

 

  1. Add the onion and caramelise it but do not let it burn, around 10 mins

 

  1. Add the cubes of potato and fry until it is soft in the middle

 

  1. Add the courgettes turning a few times until it is cooked through

 

  1. Add enough water to cover the food and a little salt to taste

 

  1. Leave to bubble until most of the liquid has been absorbed by the vegetable but you still have a little bit of sauce

 

  1. Enjoy on its own or with some crunchy bread to soak up that lovely sauce!
