Easy cheese frittata

Serves 4

  • 2 spring onions
  • 4 tablespoons frozen peas, defrosted
  • 1 courgette
  • 2 slices of ham
  • 100g feta cheese
  • 4 eggs


  1. Heat the oven to 180C/ 160C fan/gas 4.


  1. Cut up the spring onions and put them in a bowl. Add the peas to the bowl.


  1. Grate the courgette then add it to the bowl.


  1. Cut the ham into pieces and put it into the bowl.


  1. Break the feta into the bowl by crumbling it with your hands.


  1. Crack the eggs into a bowl. Whisk the eggs until the yolks are mixed into the white.


  1. Pour the eggs into the bowl with the vegetables stir.


  1. Brush a round ovenproof dish, about 16cm across, with oil.


  1. Tip everything into the dish and bake in the oven for around 30 minutes or until the egg is set. Serve with salad and crusty bread.
