Pea and Mint Soup

Serves: 2

  • 1 onion 
  • 1 potato 
  • 1 clove garlic 
  • 1 dessert spoon vegetable oil 
  • 1 chicken or vegetable stock cube dissolved in 1 pint of boiling water 
  • 1 heaped teaspoon dried mint or fresh mint 
  • 1 small packet frozen peas
  1. Slice the onion, wash the potato and chop into small cubes, chop the garlic into small pieces. 
  1. Put the oil or butter into a pan and add the onion, potato and garlic and fry gently for about 5 – 10 minutes – keep on a low heat and be careful not to burn. 
  1. Add the stock and leave to simmer for 10 minutes. 
  1. Add the packet of frozen peas and bring back to the boil for 5 minutes.
  1. Add the mint. 
  1. Blend the soup with a hand blender.

You could also try making stove top bread to eat with your soup.
