Pea and Mint Soup
Serves: 2
- 1 onion
- 1 potato
- 1 clove garlic
- 1 dessert spoon vegetable oil
- 1 chicken or vegetable stock cube dissolved in 1 pint of boiling water
- 1 heaped teaspoon dried mint or fresh mint
- 1 small packet frozen peas
- Slice the onion, wash the potato and chop into small cubes, chop the garlic into small pieces.
- Put the oil or butter into a pan and add the onion, potato and garlic and fry gently for about 5 – 10 minutes – keep on a low heat and be careful not to burn.
- Add the stock and leave to simmer for 10 minutes.
- Add the packet of frozen peas and bring back to the boil for 5 minutes.
- Add the mint.
- Blend the soup with a hand blender.
You could also try making stove top bread to eat with your soup.
