Roasted Chickpea snack

  • 400g can of chickpeas, drained and rinsed
  • ¼ cup fresh parsley [chopped]
  • ½ tbsp. olive oil
  • 1 tsp. garlic powder
  • ¼ tsp. salt
  • ¼ tsp. pepper

 

  1. Preheat the oven to 200C.
  2. Drain and rinse chickpeas. They should be slightly damp – not sopping wet.
  3. In a large bowl, combine parsley, oil, garlic powder, sea salt, and pepper. Add the chickpeas and mix until well-combined.
  4. Empty the chickpeas onto the baking sheet and spread them out.
  5. Put the chickpeas mostly together in the center of the pan so that they don’t burn
  6. Bake for 25 minutes, tossing every 5 to 7 minutes.
  7. Remove and cool. Then enjoy!

Top tip

Vary the flavours – smokey paprika is amazing, as are most other spices.  You could even do a cinnamon version
