Sausage Traybake

Serves 4

  • Olive oil
  • 2 red peppers, cut into chunks
  • 1 courgette sliced into rounds
  • 2 red onion, cut into quarters
  • 2 carrots cut into rounds
  • 4 sausages, cut into chunks
  • 8 new potatoes, cut into thick slices
  • 1 tin butter beans
  • 1 stock cube

 

  1. Preheat the oven to 200ºC
  2. Dissolve the stock cube in 250ml of boiling water
  3. Prepare the vegetables
  4. Toss the chopped courgette, peppers, carrots and red onions in a bowl with the oil and a little salt and pepper. You can also add some herbs or spices if you wish
  5. Spread out the vegetables on the preheated tray.
  6. Add the sausages to the tray.
  7. Add about half of the stock to the tray
  8. Bake for 10 minutes. Then stir everything in the tray and if it looks dry add a little more stock.
  9. Bake for a further 10 minutes, give it another stir and add the butter beans
  10. Bake for 5 more minutes
