Savoury beef bake
Ingredients
(This can be cooked in one pan if you have a frying pan that can go in the oven.)
- 1 tablespoon olive oil
- 1 small red onion, chopped
- ½ red pepper, chopped
- 1 clove garlic, chopped
- 125g minced beef
- 1 large tomato, chopped
- 1/2 teaspoon dried basil or mixed herbs
- 2 teaspoons tomato purée
- 1 tablespoon Worcestershire sauce
- 1 pinch dried chilli flakes -optional
- 60g basmati rice
- 1 tablespoon liquid beef stock
- 250ml water
- 40g cheddar cheese
Step by step
- Preheat the oven to 180°C fan/200°C/gas 6.
- Heat the oil in a frying pan. Add the onions, pepper and garlic and fry until the onions and pepper soften (around 5 minutes).
- Add the mince and fry until no longer pink.
- Dissolve the stock in 250ml of boiling water and add to the pan.
- Add the rest of the ingredients, except the cheese, to the pan. Mix and bring to the boil. Then turn the heat down and leave to simmer for 8 minutes.
- If your frying pan is ovenproof, no need to transfer. Otherwise, pour into a small casserole dish, top with the grated cheese and bake in the oven for 25 minutes.
(VEGETARIAN OPTION: use quorn mince, soy sauce instead of Worcestershire, and a vegetable stock cube.)
