Savoury Veg Crumble

Serves 6


  • 100g butter or oil/vegan spread
  • 175g wholemeal flour
  • 100g cheddar cheese, grated
  • 80g nuts and/or seeds
  1. Rub the butter and flour with your fingertips until it looks like crumbs
  2. Stir in the grated cheese and nuts/seeds

Vegetable base

  • 1 large onion
  • 675g root vegetables such as parsnip, swede, carrots, potato
  • 50g butter or oil/vegan spread
  • 25g wholemeal flour
  • 225g tomatoes or a tin of tomatoes
  • 142ml milk
  • Parsley
  • Salt and pepper
  1. Slice the onion
  2. Chop the vegetables
  3. Cut the tomatoes into large chunks (or open the tin)
  4. Put the butter/spread into a large pan to melt it
  5. Fry the onion over a gentle heat for about 5 minutes until it is soft
  6. Add the other vegetables and cook gently for around 10 minutes
  7. Stir in the flour
  8. Add the other ingredients and simmer for around 15 minutes
  9. Put the vegetables into a dish and press the topping over them
  10. Cook for 20-30 minutes at 200 centigrade until the topping is golden
