Spicy pasta with peppers courgettes and onions

Serves 4

  • 4 tablespoons olive oil
  • 2 onions peeled and finely sliced
  • 3 peppers, halved deseeded and chopped into approx. 1cm squares
  • 1 courgette trimmed and chopped into 1cm squares
  • 0.5 teaspoon dried chilli flakes
  • 360g pasta
  • Salt and pepper to taste
  1. Heat the oil in a frying pan over a medium heat and fry the onions, peppers, courgettes and chilli for 8 minutes stirring occasionally. 
  1. Meanwhile cook the pasta. Drain it saving approx. one tablespoon of the cooking water.
  1. Put the pasta back into the pan. Pour the vegetables over the pasta and heat on a very low heat for around 30 seconds, tossing everything together to allow the flavours to combine.
