Tuna parcels with sweet potato wedges
Ingredients
Makes 2 large or 4 small parcels
Sweet potato wedges
- 1 sweet potato per person
- Olive oil
- Salt and pepper
- Paprika (or other herbs or spices you like)
Tuna parcels
- Filo pastry (2 sheets per parcel)
- 1 small tin of tuna
- 1 handful sweetcorn (approx 50g)
- 1 – 2 spring onions (depending on how big they are)
- 1 tbsp lemon juice
Step by step
To make the sweet potato wedges:
- Heat the oven to 180oC/375oF/gas mark 5.
- Cut the potatoes in half lengthwise and then cut each half in half again. Put them in a bowl and mix with a sprinkle of oil and a shake of salt, pepper and paprika (or other herbs and/or spices).
- Put the wedges on a baking tray and bake in the oven for around 25 mins.
To make the tuna parcels:
- Chop the spring onion finely, drain the tuna and sweetcorn, and mix it all together in a bowl with the lemon juice.
- Take one filo pastry sheet, open flat and brush with olive oil. Put another sheet on top and brush with oil. Spoon ½ or a ¼ of the tuna mixture (depending on whether you make 2 or 4 parcels) onto a corner of the pastry.
- Fold the bottom corner over the mixture and brush with oil. Fold in both the sides, so it looks like an envelope. Roll up from the bottom to form a sausage shape and brush again with oil. Make the rest of the parcels in the same way.
- Place the parcels on a baking tray and bake for about 15 mins until golden brown and crisp.
